- 1 (13.5 oz) can full-fat coconut milk
- 1 large egg

In a large bowl, whisk together the cassava flour, tapioca flour, and salt. Slowly whisk in the coconut milk, egg, and melted coconut oil until you have a smooth, slightly thick batter. Set aside.
- Peel, core, and dice your apples into small pieces. Toss them in a bowl with the chopped walnuts (if using), coconut sugar, tapioca flour, cinnamon, and nutmeg.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Heat a large non-stick skillet over medium heat. Using a measuring cup or ladle, scoop a generous amount of batter into the pan, swirling it slightly to create a thin circle.
- Once the edges of the batter begin to set, add a dollop of apple filling to the center. Carefully fold the batter over the filling, forming a crescent shape. Crimp the edges with a fork to seal. Repeat with remaining batter and filling, making sure not to crowd the pan.
- Place the filled turnovers on the prepared baking sheet and bake for 20-25 minutes, or until golden brown and cooked through.
- Let the turnovers cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
