Directions
Step 1: Preheat and Prepare
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with coconut oil or line it with parchment paper.
Step 2: Mix the Dry Ingredients
In a large bowl, whisk together the green banana flour, almond flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
Step 3: Combine the Wet Ingredients
In another bowl, mash the ripe bananas until smooth. Add the eggs (or flaxseed eggs), melted coconut oil, vanilla extract, and unsweetened applesauce. Mix well to combine.
Step 4: Combine Wet and Dry Mixtures
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix, as this can result in a dense loaf.
Step 5: Add Optional Ingredients
Fold in any optional add-ins like chopped nuts, dairy-free chocolate chips, or dried fruit.
Step 6: Bake the Bread
Pour the batter into the prepared loaf pan, spreading it out evenly. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: Cool and Serve
Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy!
