Directions
Preheat your waffle iron according to the manufacturer's instructions.
- In a large mixing bowl, whisk together Tonomi's banana flour, baking powder, salt, and sugar.
- In another bowl, whisk together the milk, eggs, melted butter (or coconut oil), and vanilla extract until well combined.
- Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
- Lightly grease your preheated waffle iron with a little butter or cooking spray.
- Pour the batter onto the center of the waffle iron, using a ladle or measuring cup. Close the lid and cook until the waffles are golden brown and crisp, typically 4-5 minutes, depending on your waffle iron.
- Carefully remove the waffles from the waffle iron and place them on a serving plate.
- Top with your favorite toppings such as fresh fruit, maple syrup, whipped cream, or nuts.

For extra crispy waffles, let them rest on a wire rack after cooking instead of stacking them, which can make them soggy.
