8 oz. cream cheese, softened

½ cup unsalted butter, softened

Directions
Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
In a large bowl, whisk together the cassava flour, almond flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
In a separate bowl, whisk together the buttermilk, vegetable oil, sugar, eggs, vanilla extract, food coloring, and vinegar. Pour this wet mixture into the dry ingredients and stir until just combined. Don't overmix!
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let the cakes cool completely in the pans before frosting.
To make the frosting, cream together the softened cream cheese and butter until smooth. Gradually add the powdered sugar, mixing until light and fluffy. Stir in the vanilla extract and salt to taste.
Once the cakes are cool, frost the top of one layer and place the other on top. Spread the remaining frosting over the top and sides of the cake. Get creative! Pipe some rosettes, add sprinkles, or write a love message with chocolate.
