½ cup almond flour

8 oz. cream cheese, softened

Directions
Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.
In a large mixing bowl, combine cassava flour, almond flour, sugar, cinnamon, nutmeg, ginger, baking powder, baking soda, and salt.
Add vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
Fold in grated carrots until evenly distributed throughout the batter.
Pour the batter into the prepared cake pan, spreading it evenly.
Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Once baked, remove the cake from the oven and allow it to cool in the pan for 10 minutes.
Transfer the cake onto a wire rack to cool completely before frosting.
In a mixing bowl, beat softened cream cheese and butter until smooth and creamy.
Gradually add powdered sugar and vanilla extract, continuing to beat until the frosting is light and fluffy.
Once the cake has cooled completely, spread the cream cheese frosting evenly over the top.
