1/4 cup Tonomi cassava flour

3/4 cup almond flour

1 tsp baking powder

1/4 tsp salt

2/3 of a cup of butter

1/2 cup sugar

2 eggs

1/2 teaspoon vanilla

1 teaspoon almond extract

1/2 cup chopped cherries
-
optional sliced almonds.
Directions
Mixed dry ingredients space
Mix wet ingredients.
Stir wet and dry ingredients together.
Add almonds and cherries, and mix.
Rest dough, wrapped, for 30 minutes in the fridge.
The line baking sheet with parchment and shape large logs.
Sprinkle with sugar.
Bake 30 minutes at 3:50 until Brown and firm to the touch.
Cool 20 minutes, cut into eight biscotti.
Turn each slice on its side and bake 18 to 20 minutes more.
