2 cups Tonomi's Cassava Flour
- 1/2 cup almond flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup coconut oil, melted
- 1/2 cup honey or maple syrup
- 4 large eggs
- 1 cup unsweetened applesauce
- 1 tsp vanilla extract

- 1/4 cup coconut sugar
- 1/4 cup coconut oil, solid
- 2 tbsp Tonomi ground coffee (adjust according to your preference)

Preheat your oven to 350°F (175°C). Grease a square baking pan with coconut oil or line it with parchment paper.
- In a large bowl, whisk together Tonomi's Cassava Flour, almond flour, baking soda, and salt. In another bowl, combine melted coconut oil, honey or maple syrup, eggs, applesauce, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
- In a separate bowl, mix Tonomi's Cassava Flour, coconut sugar, and solid coconut oil until crumbly. Add Tonomi’s ground coffee to the mixture, ensuring it's evenly distributed. This crumble will add a delightful crunch and a burst of coffee flavor to your cake.
- Pour the cake batter into the prepared pan, spreading it evenly. Sprinkle the crumble topping over the batter, covering it generously. Pop it into the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the coffee cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely. Once cooled, slice it into squares and savor the rich, aromatic goodness.
