Delicious Apple Cake

1 cup Tonomi Cassava Flour
- ¼ tsp salt
- 1 tsp baking powder
- 1 stick (½ cup) soft butter
- ¾ cup sugar
- 2 large eggs
- 1 tsp vanilla
- 1 tbsp dark rum
- 2 baking apples, peeled, quartered, cut into cubes
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a mixing bowl, whisk together the cassava flour, baking powder, and salt. Set aside.
- In a separate large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and rum.
- Gradually add the dry ingredients to the butter-sugar mixture. Mix until just combined, being careful not to overmix. Gently fold in the diced apples.
- Pour the batter into the prepared cake pan and spread it evenly. Sprinkle 1 tbsp sugar on top.
- Bake in the preheated oven for about 40 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
