Ingredients

2 cups of Tonomi cassava flour
- 1/2 cup of coconut sugar
- 2 teaspoons of baking powder
- 1/2 teaspoon of sea salt
- 1/2 cup of coconut oil, melted
- 2 eggs
- 1/2 cup of milk of your choice
- 1 teaspoon of vanilla extract
Directions
Begin by preheating your oven to 350°F (175°C) and lining a muffin tin with muffin cups.
In a large mixing bowl, combine the cassava flour, coconut sugar, baking powder, and sea salt.- In a separate mixing bowl, whisk together the melted coconut oil, eggs, milk, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix the batter, as this can result in tough muffins.
- Next, fill each muffin cup about 2/3 of the way full with batter. Bake the muffins in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffins from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
